Shave rice wine also known as shaohing, shaoshing, or shaoxing is another type of fermented rice wine. It originates from Shaoxing, Zhejiang province. Rice wine is brown in color and the flavor is much stronger than mijiu rice wine. A good shaoxing rice wine can be drunk plain, or heated like sake. In the kitchen, it is widely used to neutralize unpleasant odors from fish or meat. It is also good to add a little of this wine at the end of cooking because it gives the meat an Asian touch. Shaoxing rice wine is also used in various marinades, soups, you name it. Truly indispensable for Chinese cuisine.
