The most popular tea in Japan, sencha, is a green tea with fresh, green color and flavor.

Sencha is a steamed green tea made from the small-leaved Camellia sinensis (tea bush). Japanese sencha tends to have a refreshing flavor that can be described as vegetable, green, seaweed, or grassy. The flavors vary with the different types of sencha and how they are made. After picking, sencha green tea processing begins with a rapid steaming of the fresh tea leaves, which prevents oxidation and preserves the green color and flavor. The leaves are then rolled, shaped and dried.

How to drink Sencha

Senchadō is the traditional Japanese way of preparing and serving sencha green tea, and involves a number of special tools and dishes. Entire rooms and buildings (tea rooms) are dedicated to the art of preparing and drinking tea. For casual home enjoyment, use a ratio of 1 teaspoon to 1 cup of pure, fresh (not distilled) water. Japanese sencha teas prefer a lower brew temperature of around 170 F; if you don't have a thermometer, use water that has just begun to simmer. Sencha also requires a short preparation time. The time will depend on the variety, how hot the water is, and how much tea you use. Some senchas are better with a 15-30 second steep, while others can hold up to 2 minutes.
