Fenjiu 20 Years Blue and White Baijiu is a kind of light-tasting, pure and clean liquor, which are the guiding principles behind the making of Fenjiu.

A classic representation of Shanxi's light scent style, Xinghuacun. It has a mild start with a light refreshing aftertaste and is best served hot at 40 degrees Celsius. What is Fenjiu? A distilled spirit originating from Shanxi, a province located in northern China, Fenjiu is a type of light-scented baijiu that features a delicate fragrance with a sweet, smooth and refreshing taste. Produced in mountainous regions with cold climates, it uses high-quality sorghum that is made from ancient well water and groundwater from Xinghua village. The sorghum grains are first steamed for about eight hours, before being fermented with daqu, a traditional Chinese fermentation starter made from peas and barley, in underground jars for about a month. The fermented grains are then distilled to produce the first batch of liquor. Any remaining grain will undergo a second round of fermentation and distillation to produce the second batch of liquor. The two batches of liquor are then combined and aged for 20 to 30 years to create Fenjiu. Relying solely on natural conditions and resources, Fenjiu's unique and traditional brewing method makes it one of the cleanest Chinese spirits with fewer impurities, making it less likely to cause a hangover. How to Drink Fenjiu Fenjiu is best consumed neat, without ice or water, usually served at room temperature in tiny doll-house-like cups. The social drink is also often shared in community settings and taken in the form of shots. For beginners, it's best to start by drinking the liquor slowly. Notice how the flavor and aroma of the liquor evolves with each sip, how it tastes in different parts of the mouth. You can also inhale the Fenjiu fragrance through your nose, making sure to exhale away from the liquid. Thanks to its light aroma, it is the closest and most accessible variety of baijiu. Pairing well with umami-packed Shanxi-style dishes with spicy and sour flavors that complement the dryness of the alcohol. Since winning the Gold Medal at the Panama Pacific International Exposition in 1915, Fenjiu, one of China's four national spirits, has been recognized as a premier baijiu spirit and continues to gain ground in international markets.
