It is a broth resulting from cooking kombu seaweed and katsuobushi or Hanakatsuo (bonito) shavings. It is the base for miso soup, noodle broth, and many other kinds of Japanese sauces. In Japan today, it's rare to find fresh, kombu-based, bonito dashi. Instead, we usually have products like Hondashi Katsuo, in powder form, which will allow Dashi to be made very quickly and easily.
